When we talk about pure stevia, we naturally start with the stevia plant. By picking the leaves of the plant and crushing them lightly, we can take advantage of the very high sweetening power: the extracts of the leaves, also called steviol glycosides. Unfortunately, these leaves in their pure form are not so handy for baking, for example. However, some people find this acceptable and like to use both the leaves freshly picked from the plant and the dried "green" stevia.
