Inulin occurs naturally in the roots of plants such as almond, chicory, Jerusalem artichoke, dandelion, salsify and artichoke that grow in cold temperate regions. Because these vegetables are eaten less than in the past, today's diet is poorer in inulin. Inulin is now extracted from chicory root. The special feature of inulin is that it is a complex of fructose molecules which means it cannot be absorbed by the human digestive system and can therefore serve in the large intestines as nutrition for the intestinal bacteria present there. It is therefore called a prebiotic. Inulin itself has no taste, but inulin preparations often contain degradation products (fructo-oligosaccharides) with a sweet taste, making the preparation slightly sweet. Inulin of Jacob Hooy has a white colour and is water-soluble.
