Locust bean gum is commonly used as a thickening agent in hot prepared foods, such as; sauces, soups, ketchup and mayonnaises.
Locust bean gum (JBM) is the ground kernel of the seed/ pod of the carob tree (Carobe). Carob bean gum is a widely used texture improver in foods due to its natural image, neutral taste and creamy texture.
The powder hydrates partially in cold water, but the full viscosity can only be obtained by heating the solution (85°C). Locust bean gum is commonly used as a thickening agent in hot prepared foods, such as; sauces, soups, ketchup and mayonnaises.
It is not digestible and can be classified as soluble fiber. In the right dosage, it is known for improving bowel function and lowering cholesterol.
