Don't think too much in terms of categories: with chickpeas, some olive oil, a handful of fresh spinach, sun dried tomatoes, pine nuts and red curry you can make the best hummus you have ever eaten! So go crazy on anything that needs a little more flavour, for example your peanut butter sandwich with red curry, a fried egg with red curry, some stir fried vegetables with red curry or sweet potato fries with red curry. Just don't tell anyone your secret; they'd just as soon think you were high on all your creations.

Can't it be spicy enough for you? Then go for the bigger brother: the Yellow Curry. Won't leave you out in the cold either. Both are not spicy, so if you like it spicy, you can add a fresh chilli.

Preparation How you going to build that curry? Fry up 1 tbsp of spices per person along with your meat and vegetables, then add 100ml of coconut milk per person. Let it simmer and you won't know what hit you! No worries: this curry is not that hot, so you can eat it just fine. More in need of spice? Then throw in some fresh chili, sambal, cayenne pepper or whatever you have on hand to make you feel satisfied. Make red curry paste: The red curry paste you buy in the supermarket is packed with e-stuffs and bulging with salt. It's a shame, because making red curry paste is really easy: For 2 persons you use 1 onion or 2 shallots, 1 garlic clove, 2 tablespoons of red curry spices and 1 chilli pepper (if you don't like it spicy you can remove the seeds), which you throw together in a blender, together with a big splash of (olive)oil. Blend it until your red curry paste is 1 even mass. Then fry your red curry paste in a wok pan on low to medium heat for about a minute. Then add meat, if you were planning to, and cook until almost done. Then add the vegetables in the same pan, for example zucchini, bell pepper, beans or chickpeas. Fry the vegetables until they are almost done (if you are using beans or lentils, don't fry them, otherwise it will become a mush). Then add 200 ml of coconut milk and let it simmer on low heat, until it is cooked and the flavours are well absorbed. Nice to garnish with some fresh coriander.
